Avocado Lovers

As a college student, I try to find quick and easy ways to make food, stay full and eat somewhat good. I have always been a fan of wraps but had never tried to make some myself, well not until recently, now I have a favorite meal! I still am not the best at wrapping the wraps but hey, it's not like I am presenting it to anyone and despite how unwrapped it is, I still love it and eat it.

The ingredients I use are from Trader Joe's, so I will tell you what I get specifically but they have these items at all grocery stores so feel free to go anywhere. I use: Organic Whole Wheat & Corn Flour Tortillas, Hummus Dip (plain/regular), Chicken (I actually have a big bag of frozen chicken strips from Target but if you prefer to use fresh chicken by all means, in fact I am pretty sure it's better), Mexican Blend shredded cheese, spinach and half an avocado (well depending on the size, add as much as you wish).

Constructing the wrap is pretty simple. I start by cooking the chicken, the reason why I love these chicken strips is because you just take them out of the package, cook them and they're done in like idk 10 minutes or so, whereas if I used fresh chicken, I would have to do a lot more and would end up with other pieces of chicken I need to use quickly, but as I said, I am pretty sure they're the healthier alternative of the two. So I cook the chicken and then I really quickly lightly toast the tortilla on each side ultimately until it has a little bit of a crunch and is warm. Once that's done I add a light layer of hummus around basically the whole tortilla. Then the spinach, chicken, cheese and lastly the avocado slices.

And it's really that easy but it taste soooo GOOD!! And I like this wrap because really you could do a lot but also do very little with it. I was thinking that maybe a nice hard boiled egg would be good in there as well, I could probably use the avocado as well instead of hummus. You can also eat it right then and there or make it ahead of time. Throwing in some cucumbers also sounds like a great and refreshing idea. I bet you could also replace the chicken for some turkey and it would be just as good, maybe some steak as well?

Lastly, what I eat this with. I like to pear it with a fruit mainly such as raspberries, a pear or grapes, but I am sure you could eat it with some steamed broccoli, carrots or some bell pepper slices.

I hope you enjoyed and I hope you try this out!

Love,

Bee
